 Pepper Salmon Sushi

Salmon coated in cracked black pepper and torched to order - the surface just caramelized, the center still rare and pink. The fat renders on contact with heat and settles into the warm sushi rice beneath, with a pinch of green onion to close it out.

Eel Sushi

The eel is grilled until the surface blisters and the edges curl, then brushed with our house-reduced eel sauce and passed over the flame again. Caramelized sweet-savory glaze over dense, tender flesh, with a slight crispness at the skin - the most aromatic nigiri on the
